Mediterranean chicken

The flavors of southern France stand out in this recipe.

Materials

  • 8 chicken thighs with bone and skin
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons virgin olive oil
  • 3 to 4 sprigs fresh thyme or 1 tablespoon dried thyme
  • 10 cloves garlic, peeled (or less according to your preference)
  • 6 medium small onions, shallots, peeled and cut in half
  • 2 cups cherry tomatoes
  • ½ cup pitted dates
  • 1 cup green olives, pitted
  • 1 cup dry white wine


  • 4 cups cooked rice, for serving (optional)
  • 4 cups mashed potatoes, for serving (optional)
  • Bread, for serving (optional)


Step by step process

1. Preheat the oven to 200°C with a rack in the lower half of the oven.

2. Season the chicken with salt and pepper all over.

3. Heat the oil in a large ovenproof dish over medium-high heat. Once the oil shimmers, add the chicken, skin side down, and cook, without stirring, for 4-5 minutes or until golden brown.

4. Turn the chicken over and place the thyme, garlic, spring onions, tomatoes, dates and olives around the chicken.

5. Pour in the wine and bring to a simmer. Cover and transfer to the oven. Cook for about 60 minutes.

6. Serve over rice or mashed potatoes and accompany with crusty bread, if desired.
