Oven-roasted lamb is one of the most classic and beloved dishes of Greek cuisine. It is ideal for festive tables as well as for Sunday meals with the family. In this guide, we will show you how to prepare and cook the perfect lamb, from choosing the cut to serving .
1. Choosing a Piece of Lamb
Choosing the right cut is the first step. If you prefer a fattier and juicier result, choose a leg or shoulder. For something more refined, choose a rack of lamb .
2. Preparation
- Marinating : Marinating gives the meat a deep flavor. Mix olive oil, garlic, rosemary, thyme, lemon and a pinch of salt and pepper. Rub over the lamb and let it marinate for at least 2-3 hours, or ideally overnight.
-
Preheat the oven : Set the oven to 160°C for slow baking.
3. Baking
Place the lamb in a roasting pan. Cover with foil for the first 2 hours to cook evenly and retain moisture. Uncover for the last hour to crisp up. Use a meat thermometer – 165°F (75°C) inside is perfect.
4. Accompanying
Baked potatoes are the perfect accompaniment. You can bake them in the same pan so they absorb the deliciousness of the lamb.
5. Serving
Let the lamb rest for 10-15 minutes before carving. Serve with fresh herbs and salad or warm vegetables.
