Materials
1 kilo of baby potatoes, cut in half
4 tablespoons of olive oil
6 cloves garlic, minced (you can change the amount according to your preference)
1 small handful of thyme
6 tablespoons of honey
6 tablespoons of mustard
4 thick boneless pork chops (about 250g each)
Step by step process
Preheat the oven to 200C fan.
Pour the potatoes, oil, garlic and thyme into a shallow baking dish and toss with your hands to coat the potatoes in the oil.
Season well with salt and pepper.
Bake for 25 minutes until the potatoes are tender and can be pierced with a knife.
Whisk the honey and mustard together in a small bowl. Season the pork chops with salt and pepper and coat them with half the marinade.
Place them in the pan with the potatoes and bake for another 10 minutes before turning the steaks and adding the rest of the marinade.
Continue baking for another 10 minutes until they are cooked through.
