Materials
1 tablespoon of extra virgin olive oil
1 kilo of ground beef, 80/20
1 small yellow onion, diced
4 cloves garlic, coarsely chopped
1 green pepper, cored and chopped
1 large carrot, grated
1 tsp salt
2 tsp chili powder
1 tsp dried oregano
2 tsp cumin
1/2 tsp cinnamon
2 tbsp tomato paste
2 cups chicken broth
1 large potato, peeled and diced
cooked rice for serving
warm tortillas for serving
fresh coriander for serving
jalapeño pepper slices for serving
Step by step process
1) Heat the olive oil in a large skillet over medium-high heat, cook the beef with the onions, garlic, pepper, and carrots until the meat is browned, about 8 minutes.
2) Add the salt, chili powder, oregano, cumin, cinnamon and tomato paste and stir for half a minute until incorporated.
3) Add the chicken stock and potatoes and stir. Increase the heat to high until it begins to boil. Reduce the heat to medium-low and cook until the potatoes are tender and the mixture has thickened, about 20 minutes.
4) Serve with cooked rice or warm tortillas, fresh cilantro and peppers if you can handle spicy food.
