A small chicken with a big personality – for delicious moments with style and substance

✨ Description

Baby Rooster Stuffed is a dish of high aesthetic and deep flavor. It is a whole dwarf chicken , selected for its delicate texture and low weight (approximately 600–750g), which has been transformed into a complete dish that combines:

✔️ Filleted internally and hand-stuffed with a colorful blend of:
– Vegetables such as peppers, carrots, zucchini, mushrooms
– Melting cheese (gruyere, edam or kasseri), for a creamy texture and rich flavor

✔️ Wrapped on the outside with thin slices of smoked bacon , which keep the meat juicy and add intensity, aroma and crispy texture
✔️ Rolled , for even cooking and impressive presentation on the plate

The result is a complete taste experience : juicy chicken, melted cheese, vegetables that "tie" with the marinade and the smoky touch of bacon. A proposal that impresses both on a festive table and in an everyday meal of high demands.

It combines the simplicity of home cooking with the finesse of restaurant creation.


🔥 Baking Method

Ready to cook – requires no additional marinating or processing.

  1. Preheat the oven to 180°C (fan)

  2. Place the baby rooster in a pan with a little water or broth on the bottom.

  3. Cover with parchment paper or aluminum foil for the first 40 minutes.

  4. Remove the cover and continue baking for 20–25 minutes , until the bacon is golden brown.

  5. Optional: Spread with a little honey & mustard for a caramelized effect

  6. Let it rest for 10 minutes before cutting – it retains its juices

Target internal temperature: 72–74°C


❄️ Maintenance Method

  • Fresh (in vacuum):
    Refrigerator (0–4°C): up to 2 days from receipt
    Freezing (-18°C): up to 4 months

  • After baking:
    Refrigerate up to 2 days
    Ideally, heat in the oven with a little water or oil for 8–10 minutes at 150°C.

Defrost in the refrigerator 12 hours before baking (if frozen)
