🔥 Baking Method
No preparation required – just bake!
🏠 In the oven (ideal):

Preheat the oven to 180°C .

Place the "hug" on a non-stick baking sheet or on a rack with a baking sheet underneath (to drain the fat).

Bake for approximately 35-40 minutes (depending on thickness).

For the last 10 minutes, you can increase the temperature to 200°C for a crispier pancetta.

Target internal temperature: 72–74°C

Let it rest for 10 minutes before cutting it to retain its juices.

It can also be cooked on a grill with a lid or on a BBQ with indirect heat, for about 1 hour .
