Boston Steak or Boston Butt Steak is a cut of pork that comes from the upper part of the shoulder blade, near the neck of the animal. It is a cut characterized by its intense marbling (fat content), which makes it particularly juicy and flavorful when cooked properly.
Features:
- Texture : The meat is relatively soft and tender due to the fat and connective tissues.
- Taste : Very rich and intense flavor, ideal for grilled, smoked and cooked foods.
- Use : It is an ideal cut for grilling, barbecue (BBQ), but also for casseroles or ovens. It is also often used for pulled pork.
Cooking tips:
- Marinating : Due to its marbling, it responds very well to marinades, especially those based on vinegar, lemon or mustard.
- Low and slow temperature : If cooked for many hours at a low temperature, the connective tissues break down and the meat becomes extremely tender.
- Grill or BBQ : Can be cooked at medium to high temperature, but care must be taken to avoid drying out.
It is a cut that is widely used in American cuisine, especially in the Southern States, due to its popularity in traditional barbecue. It is also considered economical compared to other cuts.
