Twin Steak is an impressive cut of pork, consisting of two closely spaced fillets & steaks (usually from sirloin and sirloin), naturally joined by a thin layer of fat and connective tissue. The name “Twin” comes from the impressive double-sided nature of the piece, which offers a juicy interior and a crispy exterior .
This is a piece with a rich flavor, a perfect balance of fat and meat, ideal for grilling, barbecue, barbecue or oven.
🔥 Baking Method
👉 Grill or BBQ (recommended):

Take the meat out of the refrigerator 30 minutes before cooking.

Sprinkle with salt, pepper and optionally oregano or mustard.

Grill over high heat for 4–5 minutes per side , then at a lower temperature for another 6–8 minutes , depending on thickness.

Target internal temperature: 68–70°C .

Preheat to 200°C.

Optionally, sauté first in a pan (2-3 minutes per side) for extra browning.

Bake for about 35–45 minutes , initially covered with aluminum foil, and the last 10 minutes uncovered.
👉 Sous-vide (for the most demanding):

Cook at 63°C for 2 hours , then sear in a pan or over a flame to brown.
