The 'thieves' are one of the first wines released in Greece without sulphite, already in 2009, long before the talk about natural wines started in our country. It remains one of the most notable representatives of this style of wine, with lively fruit and mineral elements, but also a proven ability to evolve over time. Sabbatiano proves once again that it is a great variety, even through this demanding and risky way of vinification.
Its color is medium gold with several green hues. Its aroma is complex with intense juicy apricot character against a background of vanilla, biscuit and mineral notes. It is relatively rich in the mouth with balanced acidity, with honey and marmalade flavors and a long spicy aftertaste. It is one of the white wines that can be aged for a few years.
Goes great with Goes well with chickpeas, aubergine salad, grilled calamari, fatty grilled fish, vitello tonato, dishes with white mushrooms, smoked cured meats and mature cheeses.
