Production area: Barbera is produced from grapes of the privately owned vineyard, in the Rodokipou Farm area, N of Silato at an average altitude of 90 meters with a North-South orientation in clay-sandy soil. Variety: Barbera, red variety originating from Piedmont in Northern Italy. Two selected clones are planted in the vineyard, with the aim of combining all the genetic characteristics of the variety.Harvest: The harvest takes place in the first ten days of September, with hand picking in 20 kg containers and sorting in the vineyard. Fermentation and aging: Alcoholic fermentation is carried out in temperature-controlled stainless steel tanks, promoting the prolonged stay of the grapes with the must. Then the malolactic fermentation takes place immediately after October. The wine is aged cyclically in 400 liter Acacia wooden barrels, for six months and partly in the tank, so that an interesting hybrid of the two profiles emerges. Finally, the production process is completed with a minimum six-month stay in the bottle - reductive aging.
Aromatic profile: Red wine, with intense purple highlights, characteristic of the variety. Complex and floral aroma, with notes of wild cherry, cherry, blueberry and lavender. Smoke and leather are characteristic, it appears full, harmonious, with a persistent pleasant aftertaste.
