From selected quality Greek farms , matured at the Siakos Meat Company facilities in special ripening refrigerators, with strict temperature and humidity control.


🔥 Cooking Instructions

  • Oven: 150°C for 5-6 hours with broth and herbs

  • Smoker: 110°C for 8-10 hours until soft and caramelized

  • Sous vide: 68°C for 18 hours, then sauté to caramelize

💡 Chef's tip: Let it rest for at least 30 minutes after cooking and cut across the grain for maximum tenderness.
