It consists of fresh lamb liver and intestines , carefully cleaned and hand-wrapped, creating an exquisite dish ready to be baked in the oven .

Gardoumba is prepared fresh daily , with lamb liver (liver, lungs, heart, spleen) , which is wrapped in fresh lamb intestines .
All ingredients are Greek-raised , without additives or preservatives, while the preparation is handmade in our facilities , with respect for tradition and hygiene rules.

🔥 Baking Instructions
Traditional handmade Gardoumba – ready for the oven :

1️⃣ Preheat the oven to 190–200°C (fan) .
2️⃣ Place the gardoumba on a baking sheet , either directly or on a rack .
3️⃣ Cover with aluminum foil and bake for 2 hours .
4️⃣ Uncover for the last 20 minutes to get a golden color and crispy texture.

💡 Chef's tip:
Add a little white wine, thyme, and lemon to the pan before baking — it will give a unique aroma and keep the gardoumba soft.

  • Wine: Xinomavro or Red Muscat

  • Accompaniments: Baked potatoes, fresh bread or yogurt with lemon
