It is made from selected wild boar pancetta (70%) , stuffed with a rich filling of chestnuts, apple, dried apricots, plums, raisins and cashews , flavored with tomato paste, soy, English Worcestershire sauce and herbs .
The addition of pineapple and brown sugar offers natural caramelization and a sweet-sour balance that highlights the wild meat.
The pancetta is handmade and rolled , ready to be baked in the oven and softened by slow cooking.

🍖 Oven (preheated to 160°C):
1️⃣ Place the pancetta in a baking dish and pour over orange juice .
2️⃣ Cover with parchment paper & aluminum foil and bake for 1 hour & 30 minutes .
3️⃣ Uncover for the last 10 minutes so it caramelizes naturally.

Add a little soy & honey in the last 10 minutes for deeper caramelization and a shinier surface.
