1️⃣ Preheat to 180°C .
2️⃣ Place the wild boar shank in a bowl with carrots & celery .
3️⃣ Drizzle with orange juice and a little olive oil.
4️⃣ Bake for 2:30–3 hours total , basting with the juices at regular intervals.
5️⃣ For the last 20 minutes, leave it uncovered to obtain a shiny, honeyed surface .
