Robust wine in every sense of the word. It has high alcohol, firm tannins and an exuberant body. It is very well made and ideally needs some aging to calm down a bit, or strong meat to bring it... ride!
Vinification: Harvesting during the night, at the moment when the grapes are at their optimal ripeness, aims to preserve the aromatic and phenolic potential of each variety. The correct application of the extraction in the pre- and post-fermentation stage helps to extract this potential. Afterwards, the juice is transferred by gravity to oak barrels, where it remains for 12 months, while its maturation includes 8-10 months remaining in the bottle.
Characteristics of the wine: Buoyant purple color. Complex bouquet consisting of aromas of jam, plum, notes of butterscotch and coffee, to end up in a subtle background of spices. Its mouth is distinguished by the balanced marriage of alcohol, acidity and tannins that gives it harmony and volume, while its long aftertaste is dominated by overripe fruits and cinnamon.
Ideal serving temperature: 17-18 °C.
It combines wonderfully with... meats cooked with spicy sauces, game and yellow cheeses.
It is a wine with great aging potential. The use of a carafe is recommended.
