The yellow rice also known as Bonnet or Parboiled owes its color to the hydrothermal treatment, it is the most suitable type of rice for pilaf as it remains pimpled. For each part of yellow rice, about 2 ½ parts of water are needed and the boiling takes from 15 to 20 minutes. Add turmeric and give color and flavor to your pilaf.
