✨ Description
Vlach rolls are an emblematic dish of Vlach cuisine, inspired by the Greek countryside and the traditional techniques of cooking mutton. In our roll, we use only minced lamb leg , trimmed of excess fat, cut and marinated by hand.
The meat is rolled into small handmade rolls, tightly wrapped, and accompanied by baby or country cut potatoes, marinated with:

Lemon juice

Fresh oregano

Mild mustard

Pepper, paprika and garlic
The rolls have also been lightly marinated with wine and lemon zest , to preserve the deliciousness of the lamb, without overwhelming the flavor.
All of this is placed on a handy oven tray , ready to go directly into the grill of a home oven or a professional grill oven.

🔥 Baking Method
The product is prepared and ready to bake – ideally on its tray.
➤ Oven (static or air):

Preheat to 180–190°C

Bake the tray covered with aluminum foil or a lid for 40–45 minutes.

Remove the lid and bake for another 15–20 minutes until golden brown.

Optional: Deglaze with a little white wine for the last 10 minutes
➤ BBQ (indirect fire):

Place the disc on a secondary burner (indirectly)

Close the lid and bake for ~60 minutes at a constant temperature (~180°C)

Finish with a stronger fire for color
Tip: Shake the pan or add broth if you want more sauce.
❄️ Maintenance Method

Fresh (in a vacuum disc or skin pack):
• Refrigerator (0–4 °C): up to 3 days
• Freezer (−18 °C): up to 3–4 months -
After baking:
• In the refrigerator up to 2 days
• Reheat in the oven at 150°C with a little broth
Defrost in the refrigerator (not at room temperature)
