Περιγραφή
About Scorpion Steak . Although not a traditional cut of meat, it is a special preparation that combines a specific cut and cooking technique.
Origin and Characteristics
The Scorpion Steak was created by chef Eric Gephart and introduced at the World Food Championships in 2018. It is a variation of the Tomahawk cut, where the meat is opened (butterfly) along the bone, creating an appearance reminiscent of a scorpion.
Preparation Process
-
Cut Selection : A Tomahawk steak is used, which is essentially a ribeye with the rib bone extended.
-
"Butterfly" technique : The meat is cut lengthwise, so that it opens and spreads out, keeping the bone in the center.
-
Marinating or Seasoning : The desired marinade or seasoning is applied to the meat.
-
Cooking : Grill or bake until desired internal temperature is reached.
-
Presentation : Served with the bone protruding, giving it an impressive appearance reminiscent of a scorpion.
Cooking Method
-
Grilling : Grill the meat at medium to high temperature, ensuring that a nice crust is achieved on the outside, while the inside remains juicy.
-
Oven : You can start baking at a high temperature to create a crust and then continue at a lower temperature until it reaches the desired internal temperature.
Maintenance
-
Raw Meat : Keep it in the refrigerator at a temperature of 0-4°C and consume it within 3-5 days.
-
Cooked Meat : After cooking, it can be kept in the refrigerator for 3-4 days or frozen for longer.
