🔥 Cooking Method (ideal: reverse sear)
1️⃣ Remove the steak from the refrigerator 45–60 minutes before grilling.
2️⃣ Preheat oven to 120–130°C .
3️⃣ Bake on a grill/baking pan for 30–60 minutes (depending on thickness) until it “rises” internally.
4️⃣ Place on a hot cast iron or heavy-duty grill for crust: 1–2 minutes per side .
5️⃣ Rest 10–12 minutes before cutting.
✅ Indicative temperatures in the center (after rest):
• Medium-rare: 52–54°C
• Medium: 57–60°C
• Medium-well: 63–66°C
• Well done: 70°C+
