A fresh, everyday, friendly wine, with an impressive unripe green color, extremely interesting and complex nose, exciting floral aromas of jasmine and honeysuckle, finesse on the palate, nice acidity, beautiful length in the mouth... Very elegant, for any time, to drink as an aperitif , but also accompanies ideal grilled seafood, pasta with seafood and all grilled fish.
Kydonitsa is the most characteristic white variety of Laconia, and no one vinifies it with more art and love than Theodorakakou Estate. It gives extremely interesting wines with "squishy" aromas, deserving a place in the Greek wine stable and a course similar to Assyrtikos.
Production process: Harvest in early September. With hands in small cages. 6-hour pre-fermentation extraction at a low temperature and a reducing environment for better protection of the aromatic potential of the variety, selection of only the free-flowing must, static de-liming, low temperature throughout the fermentation 12°C, maturation on the fine lees for 2 months and bottling.
Organoleptic characteristics: It is characterized by a bright white-yellow color with green highlights. In the foreground fruity aromas of unripe quince, pear and citrus, framed by notes of lemon blossoms, acacia, eucalyptus and fern. Mouth with lemony acidity, fruity and fine aromas with duration.
Harmony of flavors: Served at 10-12 °C. It accompanies fried and grilled fish, shellfish, pasta with seafood or white sauces, Mediterranean cuisine, rich aromatic cheeses and salty cured meats.
