Special and unconventional rosé wine. Apostolos Thymiopoulos goes against the rule that rosés should only be drunk fresh, creating a mature rosé from Xinomavro that is already in its second year and does justice to its producer.
Its color is deep pomegranate. Its aroma is ripe and reminiscent of red fruit jams, sun-dried tomato, caramel and sweet spices. Its taste is full, with lively acidity, minimal tannins and a caramel aftertaste.
Pairs perfectly with Grilled octopus, grilled tuna, grilled pork and chicken, pasta with red sauces, stuffed with minced meat and fried meatballs, mushroom or truffle risotto and spaghetti.
