Περιγραφή
Paraga tou Kyr-Yiannis is a wine with intense but refined aromas of jasmine, white-fleshed peach and apricot, typical of Malagouzia. The freshness of the mountainous Roditis balances pleasantly and offers the blend cool acidity and nerve.
The lingering full, fruity aftertaste supports the flavor intensity and underlines a whole with charming character, in an excellent wine year.
It is served cool, it is pleasant to drink alone, but also in combination with Mediterranean dishes.
Vineyard
The vineyard is located at an altitude of 700m, in the viticultural area of Agios Panteleimons, in the Amyntaio Appellation of Origin zone in Northwest Greece. The average production does not exceed 800kg/sq. The soils of the vineyards are sandy and contribute to the production of wines of exceptional finesse and rich aroma. The microclimate is characterized by cold winters and hot summers, which is however made milder by the presence of four lakes in the area, favoring the cultivation of white varieties.
Vinification
Pre-fermentation extraction (skin contact) of the precursor aromatic compounds present in the skin of the grape and contributing to the subsequent aromatic composition of the wine is applied. This is followed by static desalination and inoculation with selected yeasts suitable for highlighting the aromatic character of the variety. The micro-oxygenation and batonnage lasting 4 months in the tank give the wine structure and oiliness.
