The head is carefully cut and cleaned so that it retains all its natural flavor and aromas.
Suitable for the oven, pot or grill , it is cooked with lemon, garlic, oregano or rosemary , depending on the tradition of each place.

🔥 Cooking Instructions
❗ The product is not ready to eat — it requires cooking.

In the oven (garnished):
1️⃣ Place the head in a baking dish with salt, pepper, lemon and a little oregano.
2️⃣ Bake in a preheated oven at 180°C for 2.5–3 hours , until crispy on the outside and soft on the inside.

In the pot (traditional way):
1️⃣ Boil the head with water, celery, carrot, onion & salt for 2 hours .
2️⃣ Serve hot with olive oil and lemon or in a casserole dish.

💡 Chef's tip:
Before baking, brush the head with mustard & honey to give it a delicious, shiny crust .
