Greek Bone-in Pork Leg It is separated by an incision perpendicular to the spine and which passes between the last lumbar and the first sacral vertebra, it is a relatively hard large piece and is divided into the shank and the loin. Ideal for a classic oven roast but also for cooking in the pot. Most cold cuts are made from this part.

The estate was started as an amateur in 1995 by Michalis Vavourakis, who works as a mechanical engineer in Rethymno. His love for nature and his belief in the principles of organic farming and animal husbandry quickly turned him to organic pig farming. The innovative company founded in 2002 was the first in Greece to start the production and standardization of pork meat and cured meats, exclusively organic, certified by the organic product certification organization DIO. ktima vavourakis 2The farm is located in a mountainous area of ​​Rethymno, far from settlements, in an environmentally unspoiled area. For the rearing of the animals we follow the rules of organic animal husbandry, combined with the wisdom of traditional animal husbandry. The animals are free-range, they are fed exclusively with certified organic Greek cereals, fruits and vegetables, as well as with roots and fruits that they find in nature. We cultivate the suitable areas of the farm with plants suitable for raising pigs. The future goal of the company "Vavouraki Estate" is to breed animals exclusively with our own feed. ktima vavourakis 3The meat produced is either packed fresh or used to make cold meats, such as ham, parisaki, traditional sausages and the well-known Cretan apaki. We believe in healthy and natural nutrition and therefore no chemical additives or preservatives are used in the production process. The products are packed in an air vacuum that allows for better transport and preservation. In our effort, we rely on respect for the environment, the principles of organic livestock farming and care for quality at all stages of production. We believe that only by returning to the natural way of producing products and goods can the activities in the Greek countryside develop. We aim to create quality products that combine tradition and modern know-how, that meet the needs and requirements of quality nutrition.
