🔥 Cooking Method (ideal: cast iron + oven)
1️⃣ Leave the steak out of the refrigerator for 30–45 minutes before grilling.
2️⃣ Wipe well and salt.
3️⃣ Hot cast iron: 2–3 minutes per side for crust.
4️⃣ Transfer to a 180°C oven for 5–10 minutes (depending on thickness).
5️⃣ Rest 6–8 minutes before cutting.
✅ Indicative temperatures in the center (after rest):
• Medium-rare: 52–54°C
• Medium: 57–60°C
• Medium-well: 63–66°C
• Well done: 70°C+
💡 Chef's Tip
• Pepper at the end to prevent it from “burning” and becoming bitter.
• Finish with butter + thyme + garlic in the cast iron for flavor.
