🔥 Cooking Method (Roll in the Oven)

1️⃣ Remove the meat from the refrigerator 20–30 minutes before cooking.
2️⃣ Brush with butter or olive oil, salt, pepper and a little garlic.
3️⃣ Sear in a hot pan for 2–3 minutes on each side.
4️⃣ Transfer to a baking pan with a little white wine and broth.
5️⃣ Bake at 170–180°C for approximately 60–80 minutes .
6️⃣ Let it rest for 10 minutes before slicing.

✅ Ready when the meat is tender and cut into thin, juicy slices.


🫕 Cooking in a Pot

• Sauté the nougat in butter or olive oil until it turns brown.
• Add onion, garlic and deglaze with white wine.
• Add broth and simmer for 1–1.5 hours until tender.
• Tie the sauce with lemon or light cream.

• Milk-fed veal is very tender , so prefer a medium roasting temperature to maintain its juiciness.
