Celery was known to the Ancient Greeks, the Romans and the Chinese from the root to the seed, where they used it in cooking and medicine. It is a biennial or perennial plant that reaches 80 cm in height. It has a fleshy root, multi-branched stem, compound leaves with triangular toothed leaflets and white, small flowers.
