Short Ribs are a piece of beef obtained from the breast, the chuck, They consist of a small part of the rib bone, which is covered by meat that varies in thickness. There are two main types of cuts: "flanken", which is cut along the bone, and "english", which is cut parallel to the bone and leaves the bone up to 6 inches (15 cm) long.
