The Pork Fillet Wellington is the epitome of the modern Greek gourmet approach to the everyday table.
It is a whole pork fillet , selected from the most tender and lean parts, which is lightly marinated with herbs and then wrapped in luxurious layers :

✔️ Duxelles – creamy mixture of sautéed mushrooms, onion and fresh thyme
✔️ Italian prosciutto or country bacon , which enhances the flavor and keeps the meat juicy
✔️ Handmade puff pastry , baked golden and crispy, embracing the fillet like a gift of haute cuisine

Each bite combines the softness of the pork, the intensity of the mushrooms and the airy texture of the phyllo – an emotional experience , full of warmth and finesse.

Ideal for holiday tables, anniversary dinners or when you want to impress without cooking for hours.

  • Exterior: Crispy, golden foil with a buttery texture

🔥 Baking Method

No preparation required – bake directly from the refrigerator or freezer

In the Oven (recommended):

  1. Preheat to 180 °C (fan)

  2. Place the Wellington on a baking sheet lined with non-stick paper.

  3. From the refrigerator (fresh): Bake for 45-55 minutes

  4. From frozen: Bake for 55 –65 minutes

  5. In the last 10 minutes, you can increase to 210°C for extra color

  6. Let it rest for 5–10 minutes before cutting – it retains all the juices

Optional: Brush with egg yolk with a little milk before baking for shine

  • Fresh (pre-cooked or ready to cook):
    Refrigerator (0–4°C): up to 2 days
    Freezing (-18°C): up to 4–5 months

  • After baking:
    Keeps in the refrigerator for 2 days – reheat in the oven at 160°C for 8–10 minutes

Do not refreeze after thawing.
