Super filling, super delicious recipe.
Materials
- 1 kg of ground beef
-
1 kg of minced pork
-
1 medium yellow onion, diced
-
1 large green or red pepper, seedless, diced
-
1 large Jalapeño, seeded and chopped or 1/8 teaspoon cayenne pepper
-
3 large cloves of garlic, finely chopped
-
1 teaspoon of garlic powder
-
2 teaspoons of sea salt
-
1/2 teaspoon freshly ground black pepper
-
3 tablespoons chili powder, mild
-
2 teaspoons cumin
-
2 teaspoons brown sugar
-
2 cans red kidney beans, drained, rinsed
-
1 can of diced tomatoes
-
1 1/2 cups stock (chicken or beef)
For serving (optional)
-
Grated cheddar or mozzarella cheese
-
Cream cheese
-
Green onions, chopped
Step by step process:
-
In a large saucepan over medium-high heat, combine ground beef, ground pork, onion, bell pepper, jalapeño, and garlic.
-
Cook, breaking up the meat until browned and the onions and peppers begin to soften, about 5-7 minutes.
-
Add the garlic powder, salt, pepper, chili powder, cumin, brown sugar, beans, tomatoes, and stock.
-
Turn the heat up to high and bring the chili to a boil. Reduce heat to medium and simmer, stirring almost constantly, for 5 minutes.
-
If the chili sputters, lower the heat a bit and stir more slowly. This will help reduce the liquid and concentrate the flavors.
-
Turn the heat to low. Simmer the chili, uncovered, for another 25 minutes. Let the prepared chili sit for 10 minutes before serving.
-
Serve with cheese, sour cream and green onions.
Good appetite!
