This rich pasta salad recipe highlights the Mediterranean flavors that make gyros so delicious, while the creamy yogurt sauce ties all the ingredients together.
Materials
1 teaspoon thyme powder
½ teaspoon garlic powder
½ teaspoon cumin powder
½ teaspoon oregano powder
¼ teaspoon black pepper
½ teaspoon salt
2 tablespoons virgin olive oil
half a package of gyros of your choice
450 grams of dry pasta of choice
1 cup mixed Greek olives, pitted and halved
⅓ cup chopped fresh parsley
¼ red onion, chopped
113 grams grated feta cheese
340 grams cherry tomatoes, halved
1 cup diced cucumbers (about 1 small cucumber)
Dressing
1 cup yogurt
½ cup mayonnaise
¼ cup virgin olive oil
1 large clove garlic, grated, plus more to taste
2 tablespoons fresh lemon juice (from 1 lemon)
1½ teaspoon dried dill
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Step by step process
1. In a large bowl, mix together the thyme, garlic powder, cumin, oregano, pepper, salt, and olive oil. Add the gyros and mix until completely coated.
2. Heat a large skillet over medium heat. Add the gyros in a single layer and cook until golden brown, about 3 to 4 minutes. Return the gyros to the large bowl.
3. Meanwhile, prepare the dressing. In a medium bowl, whisk together the yogurt, mayonnaise, olive oil, garlic, lemon juice, dill, garlic powder, salt, and pepper.
4. Add the cooked pasta, olives, parsley, red onion, feta cheese, tomatoes and cucumbers to the bowl with the gyros and toss to combine. Pour the sauce over the pasta mixture and toss until coated.
5. Cover and refrigerate for at least 30 minutes before serving.
Enjoy your meal!
