Satisfying Chicken Pie

A homemade & delicious pie for the whole family

Materials

  • 1/2 cup butter (about 1 stick)
  • 2 cups carrots, sliced
  • 1 cup celery, sliced
  • 1 cup onion, chopped
  • 1/2 cup flour
  • 1 teaspoon of salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon fresh thyme, chopped (optional)
  • 1 cup whole milk
  • 2 cups chicken stock
  • 2 cups peas, frozen
  • 4 cups cooked chicken (3 chicken breasts, boiled or roasted)
  • 1 package frozen puff pastry, slightly thawed
  • 1 egg (for brushing the dough before baking)

Step by step process:

  1. Heat the oven to 200°C.
  2. Melt the butter in an approximately 12-inch cast-iron skillet (or other non-stick pan) over medium heat.
  3. Add the onion, celery, and carrots to the butter and sauté for 5 minutes, until the onions are soft and translucent.
  4. Add the flour, salt, pepper, garlic powder and thyme to the butter and vegetables to form a thick paste. Sauté for 2 minutes.
  5. Slowly add the milk. Once the milk is fully incorporated, slowly add the chicken stock.
  6. Simmer, stirring constantly with a whisk, until the mixture thickens slightly.
  7. Add the peas and chicken to the sauce.
  8. Open a sheet of puff pastry and cover the dish.
  9. Keep the rest of the puff pastry and form a wreath of the puff pastry around the pan and with some more puff pastry you can form triangles to decorate the top.
  10. In a small bowl, beat the egg with 1 tablespoon water and brush the puff pastry with the egg.
  11. Place in the oven for 25 minutes until the pastry is golden brown and the filling has risen.
  12. If it browns too quickly, cover it with aluminum foil after it gets as dark as you'd like.
  13. Allow the pie to cool before cutting.
