Steak sandwich

Materials




1 boneless veal steak
1 tbsp olive oil
1 sc. garlic
1 sprig of thyme or rosemary
salt
freshly ground pepper
1 small piece of butter


For the sandwiches

2 large red onions
25 grams butter
1 tbsp olive oil
2 tbsp brown sugar
salt
pepper
50 ml of wine or balsamic vinegar
2 ciapatta buns
a little olive oil
mustard
sprouts



For the steak sandwich

First prepare the caramelized onions. We choose large, red onions, remove their skins and their first dressing. With a sharp knife, cut them into rings, about 1.5 cm thick.

Heat the olive oil with the butter and sauté the onions for the steak sandwich for 3 minutes.

Salt lightly to wilt.

Add the sugar and stir until it melts. Add the vinegar, lower the heat, cover the onions and let them caramelize for about 20 minutes and soften.

We check the salt and pepper at the end. Sprinkle some thyme.

Take the steak out of the fridge half an hour before cooking.

Season the meat all over with salt and pepper.

Heat a non-stick pan on the fire until it burns, oil the steak with a little olive oil, smearing it all over and cook in a hot pan, for about 3' on each side.

Put a broken clove of garlic in the pan, flavor for 1' and remove.

If you want well-done meat and not medium-rare, leave for an additional 2 minutes of cooking on each side.

Finally, add a little butter to the meat and spoon it over the steak while it is cooking.

Remove the beef steak to a plate, cover and let it rest for 4-5 minutes.

Then, we cut it into slices. We need all the juices of the steak.

Open the ciapata buns in half without dividing them. Put them in the oven for 4-5 minutes to warm up. As soon as the opened buns are warm, we dip them in the juices of the steak that have come out while it rests.

Spread mustard on the breads and evenly distribute the caramelized onions, the juicy steak and add plenty of sprouts.

Cover the steak sandwich and serve immediately.

If desired, add cheese that melts while the ingredients are hot, sauteed mushrooms or salad leaves.
