🔥 Cooking Method (recommended – oven)
Baking in the oven (juicy result)
1️⃣ Preheat the oven to 170°C .
2️⃣ Season with salt and pepper and brush with olive oil . Optional: mustard , honey , thyme , paprika .
3️⃣ Place in a baking dish with potatoes/vegetables and add ½ glass of water or broth .
4️⃣ Bake covered (aluminum foil or casserole dish) for 1 hour 45' - 2 hours 30' (depending on weight).
5️⃣ Uncover and increase to 200°C for 15–25 minutes to brown.
6️⃣ Let it “rest” for 10 minutes before cutting it.
✅ Ready when the juices run clear and it is fully cooked to the bone.
💡 Chef's Tip
• For a more “Greek” character: lemon, oregano, garlic and potatoes in the same pan.
• For a more “gourmet” experience: honey mustard, thyme and a little rosemary.
