🔥 Cooking Method (recommended – oven/grill)

Slow cooking for tenderness + strong finish for browning

1️⃣ Preheat the oven to 170°C .
2️⃣ Season with salt and pepper and brush with olive oil . Optional: mustard, garlic, rosemary, paprika.
3️⃣ Place in a baking pan/dish with ½–1 glass of water or broth/wine .
4️⃣ Bake covered for 1 hour 45' – 2 hours 45' (depending on weight/thickness).
5️⃣ Uncover and increase to 210°C for 15–20 minutes for nice browning.
6️⃣ Let it “rest” for 10–15 minutes before cutting it.

✅ Ready when the meat is fully cooked in the center and the juices run clear.


💡 Chef's Tip

• For a juicier result, give it time to cook covered and finish it off strongly only at the end.
• If you're making a roll, tie it with string and spread with honey-mustard for a nice crust.
