🔥 Cooking Method (baking pan / oven)
1️⃣ Preheat the oven to 170–180°C .
2️⃣ Place the front in a baking dish, season with salt and pepper and add olive oil , garlic , rosemary/thyme .
3️⃣ Add potatoes (optional) and a little water or white wine to the pan.
4️⃣ Cover (with parchment paper & aluminum foil or a baking dish) and bake for 2–2.5 hours .
5️⃣ Uncover and increase to 200–220°C for 15–25 minutes for crispy skin and nice browning.
6️⃣ Let it "rest" for 10 minutes before cutting.
✅ Ready when it is fully cooked and the meat detaches easily.
💡 Chef's Tip
• For crispy skin: finally dry the surface thoroughly and let it brown strongly.
• For extra flavor: a little lemon zest and oregano when serving.
