It is tender meat with bones, quite fat in relation to the shoulder. The frame that includes the ribs joined together with bare, cleaned ends makes for a pot roast. Ribs, the "rack" of mutton, is the name given to the entire area of the ribs, as well as the sides of the spine, between the shoulder and the loin. A tender and tasty piece that is suitable for grilling, breading, sautéing, or grilling.
