The Psilo Sausage of Tzoumagia, Serres is one of the most characteristic, nationwide known sausages of Macedonia: an authentic specialty that was born in Iraklia, Serres and took its name from the older name of the town. “Psilo”, thin and properly tied, cooks quickly, browns evenly and releases that familiar aroma of spices and herbs that makes the bite reminiscent of an old tavern and a home table together.
It is made from pork in sheep's intestines , with salt, herbs, and spices — a recipe simple at heart, but huge in flavor when cooked properly.

🔥 Cooking Method
❗ The product is not ready to eat — full cooking is required before serving.
Grill / BBQ (ideal)
1️⃣ Medium heat (not “all the way”, so that it cooks properly inside).
2️⃣ Bake 10–14 minutes , turning frequently.
3️⃣ Do not pierce it so it doesn't lose its juices.
Pan
1️⃣ Over medium heat with a little olive oil (or without, if it renders its fat).
2️⃣ 10–12 minutes , turning regularly.
3️⃣ Optional: at the end, pour 1–2 tbsp. water and cover for 1 minute to let the aroma “work”.
Oven
1️⃣ Preheat to 180°C .
2️⃣ Bake 18–22 minutes , turning once.
✅ Ready when it is fully cooked in the center and the juices run clear.
💡 Chef's Tip
For “Tzoumagias” as it should be:
• Grill over medium heat and let stand for 2–3 minutes before cutting.
• Serve with lemon , roasted pepper and warm pita — and… bread for the soups.
