🔥 Cooking Method (recommended – oven/grill)
Slow cooking for tenderness + strong finish for crust
1️⃣ Preheat the oven to 160–170°C .
2️⃣ Season with salt and pepper and brush with olive oil . Optional: mustard, garlic, rosemary, paprika.
3️⃣ Place in a baking pan/dish with ½–1 glass of water or broth/wine .
4️⃣ Bake covered for 2–3.5 hours (depending on weight).
5️⃣ Uncover and increase to 210–220°C for 15–25 minutes for browning.
6️⃣ Let it “rest” for 10–15 minutes before cutting it.

• For a more “grilled” result: add some smoked paprika and finish strongly at the end.
