🔥 Cooking Method
❗ The product is not ready to eat — full cooking is required before serving.
Oven / Casserole (slow cooking)
1️⃣ Preheat to 160°C .
2️⃣ Brown the shank in a pot/pan with a little olive oil for 2–3 minutes per side.
3️⃣ Place in a casserole dish with garlic, rosemary/thyme, carrots/onion and add broth or wine.
4️⃣ Cover and bake for 2.5–3.5 hours , until tender and falling off the bone.
5️⃣ Uncover for 10–15 minutes at the end for nice caramelization.
Casserole (wine)
• Simmer for 2–3 hours until tender and the sauce thickens.
✅ For food safety, target internal temperature ≥ 75°C .
💡 Chef Tips (fail-safe)
• The secret is low & slow : the slower, the more tender.
• If you want a “velvety” sauce, puree the vegetables from the pot and combine them with the juices.
• Let it rest for 10 minutes before serving.
