Beef in Wine in a Baking Bag is the “smart” holiday dish that comes out like a casserole — but with the convenience of the oven. It stars the tender veal scallop , a particularly soft and fine cut, marinated in olive oil, red wine, salt and pepper , so that it brings out a rich flavor and stays juicy.
Along with it, the “good stuff” goes into the bag: mushrooms, caramelized onions, peppers and carrots , all of our own making . The roasting bag keeps the juices inside, “works” like slow cooking and gives you a tender, winey, dense result, with a sauce that begs for bread.

🔥 Cooking Method (in a baking bag)
1️⃣ Preheat the oven to 180°C .
2️⃣ Place the bag in a baking pan (as is, with the contents).
3️⃣ Make 2–3 small holes in the bag (top) to allow steam to escape.
4️⃣ Bake for 90–120 minutes (depending on the weight and thickness of the pieces).
5️⃣ Optional: at the end, carefully open the bag and bake for 10 minutes uncovered for a more “tight” sauce/light browning.
✅ Ready when the meat cuts easily and the juices run clear.
💡 Chef's Tip
• Don't be afraid of "slow" baking — that's where the miracle in winemaking happens.
• If you want a smoother sauce, reserve the juices from the bag and boil them for 2–3 minutes in a saucepan.
