✅ For safety, target internal temperature ≥ 75°C (ideally close to the bone).
🔥 Cooking Method
Oven (lemonade baking tray)
1️⃣ Preheat to 190°C .
2️⃣ Season with salt and pepper and add olive oil, lemon, oregano (and garlic optionally).
3️⃣ Bake for 45–60 minutes , turning once.
4️⃣ For a crispier skin: 210°C for 5–10 minutes at the end.
Grill / BBQ
• Over medium heat, 8–10 minutes per side , until fully cooked.
Pot
• Brown for 5–7 minutes, then simmer with the lid on for 35–50 minutes until lemony or browned.
✅ Ready when the juices run clear and there are no pink spots near the bone.
💡 Chef's Tip
• For a crispy result: wipe well before baking and apply a little olive oil to the skin.
• For a more "complex" flavor in the pan: potatoes together, to absorb the juices.
