The leg has an intense, deep meaty aftertaste and stands up wonderfully to roasting — especially when you work it with proper marinating and a slow oven or crock pot. 🔥 Cooking Method (recommended – oven/casserole)

Slow cooking for tenderness

1️⃣ Preheat the oven to 160–170°C .
2️⃣ Make small incisions and add garlic (optional).
3️⃣ Season with salt and pepper and brush with olive oil , oregano , thyme/rosemary and lemon .
4️⃣ Bake covered (aluminum foil/grease paper or casserole dish) for 2.5–3.5 hours (depending on weight).
5️⃣ Uncover and increase to 200–220°C for 15–25 minutes for nice browning.
6️⃣ Let it “rest” for 10–15 minutes before cutting it.

✅ Ready when the meat flakes easily and the juices run clear.


💡 Chef's Tip

• Zucchini loves marinating . If you have time, leave it in the refrigerator for 2–12 hours with lemon, garlic, oregano and olive oil.
• For a more "rounded" flavor, add a little mustard to the pan along with lemon.
