🔥 Cooking Method (Roll in the Oven)

1️⃣ Remove the meat from the refrigerator 20–30 minutes before cooking.
2️⃣ Brush with olive oil, salt, pepper, garlic and rosemary.
3️⃣ Sear in a hot pan for 2–3 minutes on each side.
4️⃣ Transfer to a baking tray with vegetables and a little broth or wine.
5️⃣ Bake at 170–180°C for approximately 70–90 minutes (depending on weight).
6️⃣ Let the meat rest for 10 minutes before cutting.

✅ Ready when it cuts easily into juicy slices.


🫕 Cooking in a Pot

• Sauté the nougat in olive oil until it turns brown.
• Add onion, garlic and deglaze with a little wine.
• Add broth or water and simmer for 1.5–2 hours until tender.
• Serve with lemon, mustard or red sauce.
