🔥 Cooking Method (Classic Osso Buco – Casserole)

1️⃣ Season the meat well with salt and pepper.
2️⃣ Fry in a hot pan with a little olive oil until golden brown.
3️⃣ Add onion, carrot, celery and garlic.
4️⃣ Deglaze with white wine and add broth or tomato.
5️⃣ Simmer with a lid on for 1.5–2 hours until very tender.

✅ Ready when the meat easily detaches from the bone.


🔥 Oven / Casserole

• Bake covered at 170–180°C for about 2 hours with broth and vegetables.
• Leave uncovered for 10 minutes at the end to allow the sauce to thicken.


💡 Chef's Tip

• Tie the piece with cooking twine so that it holds its shape during cooking.
• Serve with gremolata (parsley, lemon and garlic) for an authentic Italian flavor.
