🔥 Cooking Method (indicative)

Oven (classic baking tray with potatoes)

1️⃣ Preheat to 170–180°C .
2️⃣ Season with salt and pepper, add olive oil , lemon, oregano/thyme, garlic (optional).
3️⃣ Bake for 2–3 hours (depending on weight/cuts).
4️⃣ If necessary, cover in between to keep it juicy.
✅ Ready when the meat flakes easily and the juices run clear.

Spit

• Requires a steady, medium heat and time depending on the weight, with frequent checking.

Casserole (lemonade)

• Cut into portions and cook slowly until tender.


💡 Chef's Tip

• For a juicier result, leave the meat out of the refrigerator for 30 minutes before cooking (not in heat/sun).
• In the baking pan, give it time at the end, uncovered, to make a nice crust.
