🔥 Cooking Method (recommended – oven/casserole)

Slow cooking for tenderness + strong finish for browning

1️⃣ Preheat the oven to 160–170°C .
2️⃣ Season with salt and pepper and brush with olive oil , lemon , oregano and garlic .
3️⃣ Place in a baking pan/dish with ½–1 glass of water or broth .
4️⃣ Bake covered for 3–4 hours (depending on weight).
5️⃣ Uncover and increase to 200–220°C for 15–25 minutes for a nice crust.
6️⃣ Let it “rest” for 10–15 minutes before cutting it.

✅ Ready when the meat flakes easily and the juices run clear.


💡 Chef's Tip

• Mutton loves strong herbs: thyme, rosemary, garlic .
• For a more “rounded” flavor, add 1–2 tablespoons of mustard or a little wine to the pan.
