The Greek Forequarters of Sheep is a cut with a deep, traditional flavor and rich character. The forequarters produces meat that “writes” in the pot and oven, with collagen that melts during slow cooking and gives a honeyed result. It is ideal for recipes that require time and reward: fricassee, lemonato, wineato, giouvetsi or stews with vegetables.

🔥 Cooking Method (slow - pot)
1️⃣ Lightly sauté the meat in a little olive oil for color.
2️⃣ Add onion , garlic , bay leaf and (optionally) deglaze with a little wine.
3️⃣ Add water/broth until covered and lower the heat.
4️⃣ Simmer with a lid on for 2–2.5 hours , until tender.
5️⃣ Finally, add the sauce (lemon/egg-lemon or wine) depending on the recipe.
Oven / Casserole
• 170–180°C for 2–3 hours covered, and at the end 10–15 minutes uncovered for browning.
✅ Ready when the meat comes off easily and has "melted".
💡 Chef's Tip
• For a milder flavor, do a quick blanch for 2–3 minutes and then continue with the recipe as normal.
• Sheep love aromatics: rosemary, thyme, bay leaf .
