🔥 Cooking Method (ideal: reverse sear)

1️⃣ Leave the steak out of the refrigerator for 45–60 minutes before grilling.
2️⃣ Preheat oven to 120–130°C .
3️⃣ Bake for 30–60 minutes (depending on thickness) until properly heated inside.
4️⃣ Place on a hot cast iron or heavy-duty grill for crust: 1–2 minutes per side .
5️⃣ Rest 10–12 minutes before cutting.

✅ Indicative temperatures in the center (after rest):
Medium-rare: 52–54°C
Medium: 57–60°C
Medium-well: 63–66°C
Well done: 70°C+

• Salt before, pepper at the end for a clean crust.
