Oven / Casserole (slow cooking)

1️⃣ Preheat to 160°C .
2️⃣ Grill the neck for 2–3 minutes per side to caramelize.
3️⃣ Place in a casserole dish with onion, garlic, carrot and herbs.
4️⃣ Add wine or broth and cover.
5️⃣ Bake for 2.5–3.5 hours until the meat is tender and falling off the bone.
6️⃣ Uncover 10–15 minutes at the end for a more “tough” surface.

Casserole (wine / lemon)

• Simmer for 2–3 hours , until tender and the sauce thickens.

✅ For food safety, target internal temperature ≥ 75°C .
